We visited Spuddy for his Cajun Cooking experience (personal cooking lesson). We made Andouille Sausage from scratch. We cooked Jambalaya, Gumbo and Smothered Okra. The food was amazing and the experience with Spuddy was unforgettable. This is a great thing do do when you visit the plantations.

Spuddy's Cajun Foods is an eat-in restaurant that also allows diners to come into the kitchen and enjoy a Cajun Cooking Experience while cooking with Spuddy himself. Learn the secret to a great roux and what makes Andouille from the River Road parishes like nowhere else in the world. Located at 2644 Highway 20 in Vacherie, Louisiana, Spuddy's was established in 1993 and is open from 10 to 2 Thursday and Friday and 9 a.m. to 4 a.m. on Saturday. For the uninitiated (or Yankees), roux is a combination of flour and fat that is used as a base to thicken sauces, gravy, casseroles, soups and gumbo. Cajun is a style of cooking developed by Cajun/Acadians who were deported from Acadia to Louisiana during the 18th century and who incorporated West African, French and Spanish cooking techniques into their original cuisine. An authentic Cajun meal is usually a three-pot affair with one pot dedicated to the main dish, one to steamed rice, specially made sausages or a seafood dish and the third containing whatever vegetable that is available. Crawfish, shrimp and andouille sausage are staple meats used in a variety of dishes. Green bell peppers, onions and celery are called "the Trinity" of aromatic vegetables used by Cajun chefs. The food is more spicy than hot. My wife and I enjoyed slow-cooked Cajun gumbo with home-made andouille, smoked sausage and chicken, a half-pound of fried shrimp, a grilled shrimp salad with romaine and shredded cheddar cheese and a fried chicken tenders dinner.
