Wonderful barbecue! The green chile grits were a fabulous choice for a side and the homemade potato salad was tops. Our waitress , Bree, was top notch and answered all our questions with a smile on her face. Be prepared for large servings of some great food!

My uncle and I ran all over Carlsbad New Mexico looking for a place that wasn't packed to eat. We found red chimney had plenty of space in the parking lot. Their food was amazing! I felt like I had a home cook meal. The atmosphere is amazing! There were so many things to look at while we waited which wasn't long. The service was fast and professional and super friendly. I was shocked on how fast they got the food out to us and how good it was. I am definitely going back to this place the next time I hit this town.

Our door was excellent. Our server was pleasant and helpful and the service was fast. I had the St Louis ribs, my wife had the pulled pork over grits. My ribs were meaty and delicious. It came with beans that were pretty much tasteless and a roll that was too tough to chew. My wife said the pulled pork and grits was pretty good. I don't eat grits so I'll take her word for that. However, we got there at 5:00 pm. They were out of my first choice for an adult beverage, and they were out of my selection for dessert! It's 5:00 pm. You are open for several more hours! Plan better! They also added a $2 charge for using my credit card. 90% of their business is by card. If they don't accept cards they would lose business. Stop penalizing people for patronizing your business! I deducted the $2 from the tip. It wasn't the server's fault, but I'm not paying it either.

Fun old-timely spot for bbq! The decor is top notch with lots of rustic memorabilia. Service was friendly and attentive as well. I got the one meat plate with brisket and green chile grits and okra as my two sides. The brisket was a bit drier than I'd like, but still tasty. The grits were delicious and although I was not expecting fried okra, I still enjoyed it. Beans were standard. The portion was pretty big as well. Parking lot in front and bathroom available

American BBQ joint that is on the way to the Carlsbad Caverns. My friend and I stopped here for lunch and there was no wait for a table around 11:30am on a weekend. Free parking lot available. They do accept credit cards although there is a small cash discount. I had the Fort Knox potato which came with the cowboy mix (brisket, ham, and pork), cheese, and red onions. I opted for no sour cream on mine. The potato was huge and piled high with fixings. They gave us rolls with BBQ sauce as well. Our waitress Toni was very friendly. Single occupant restrooms are available.

Wow really good food. Great sized portions of food. I also admire a place that takes their napkins this seriously. They are like having a small thick towel to clean your face and hands.

Worst place I've ever ate, horrible server with a fake pony tail she had a terrible attitude, we practically had to beg her for the rolls that are supposed to come out not to mention the sauce with it wasn't butter it was "bbq sauce" but tasted like straight up vinegar. Terrible food and terrible service, I'd rather eat at a gas station then there every again and not to mention very over priced, $107 for 2 sand which's 2 sides of fries and a side of cheese curds. And they were disgusting fries were definitely store brought and freezer burnt then microwaved and brought to the table. Disgusting!! She came to our table about 3 times with a dirty look on her face acting like she was better then everyone there nasty food and nasty attitudes, tables weren't clean there was food, trash, and crayons all over the floor! Instead of walking around with dirty looks grab a broom and start sweeping.

Our waitress had such a bad attitude and didn't hide it. After we had to ask for our microwaved rubbery buns, we then had to ask for butter since the vinegar bbq dipping sauce they served with them was disgusting. We were charged almost 11 dollars for stale mcdonaldish fries with canned cheese, our cheese curds were over done and cheeseless. The chicken and smashed pork sandwich was great.

Way to over priced, waiter had the fakest weave. The only thing that was good was pickle slices and sprite. (ps cheese curds didn't have any cheese)

Not sure how this place has so many stars. We were not impressed by any of it. The portions compared to prices was ridiculous. We ordered a half and half dinner with brisket and turkey, they were out of pork and chicken when we came in. The meal has three very small pieces of turkey and the same of brisket. The side we got on this meal was the mac and cheese and potatoes and gravy. The Mac and cheese didn't take any better than KFC and we didn't finish it. We didn't even eat the potatoes and gravy because it was terrible. The beans tasted like they soaked all day in salt water with no flavor, there was nothing good or BBQ about them. The second meal we ordered was the cut spare ribs, they were edible. The sides with this dish were the potato salad and green chile cheese grits. I could kinda taste the green chili, no sign of any type of cheese or cheesy sauce. The potato salad was good-ish, but tasted run of the mill store bought. The bread rolls were tough and rubbery and hard. They were by far the worst rolls I've ever had eating out. We also ordered the fried mushrooms, I liked those, they were good. With tip this was almost $80 for my husband and I. We didnt dine in or get any drinks. The staff greeted us when we walked in, no complaints there. I would definitely not recommend this place, nor will I ever give them my hard earned money again for such a lacking meal. I'm super sad about this because we were excited to try this place. Im utterly disappointed

The restaurant is clean and has a great welcoming atmosphere. The waitress was very polite and provided timely service. The food in general was generic, bland and the meat was dry. The spare ribs, brisket and ham were dry and the Mac n cheese was just okay. The meal was overpriced for the quality. The service made the dining experience worth the visit.
