My uncle and I ran all over Carlsbad New Mexico looking for a place that wasn't packed to eat. We found red chimney had plenty of space in the parking lot. Their food was amazing! I felt like I had a home cook meal. The atmosphere is amazing! There were so many things to look at while we waited which wasn't long. The service was fast and professional and super friendly. American BBQ joint that is on the way to the Carlsbad Caverns. My friend and I stopped here for lunch and there was no wait for a table around 11:30am on a weekend. Free parking lot available. They do accept credit cards although there is a small cash discount. I had the Fort Knox potato which came with the cowboy mix (brisket, ham, and pork), cheese, and red onions. Wonderful barbecue! The green chile grits were a fabulous choice for a side and the homemade potato salad was tops. Our waitress , Bree, was top notch and answered all our questions with a smile on her face. Be prepared for large servings of some great food!
