Absolutely incredible! I explained to the gentleman that I'm from a small town in Michigan and what did he recommend. He recommended a blackened tilapia sub with blackened shrimp and the boudain balls. I also got a second crayfish sub. It is by far the best food I've had since arriving in Texas. If your looking for some great food that tastes amazingly fresh, you gotta check thus place out!!!! When I come back to Texas I will definitely be stopping here again!

Unfortunately, looks like I got a sandwich on an off day. Only 2 meatballs of under cooked alligator in a mountain of bread for $12.00. I'll have to try something different next time. Too far away to go back for a better sandwich.

Love the food but most importantly that during Mardi Gras season they bring in king cakes from Gambino's bakery in NOLA! Best of the best! Wish they would pick up some doberge cake while they are there. The owners are amazing love the blues music that's piping thru the speakers inside. Makes you feel like you are in NOLA.

Why 5 stars? Because this is exactly the type of place I like to support. --- --- --- The wife and I were looking to take our son to the Woodlands Children's museum and specifically looked for a place in the area where we could grab something quick and easy to eat in the car while he took a pre-museum nap. While I was ordering, he woke up, so we ended up eating inside. Especially before bringing a loud toddler inside, I was really loving the vibe in here. They were blasting some really great blues guitar over the speakers and the place felt like a bit of a throwback. My only regret is that I forgot to ask what the music was because I was ready to find the channel on Spotify or Pandora and get some mileage out of it at home. I heavily debated between the shrimp sandwich or the Sweet Onion BBQ. I ultimately went with the shrimp because the guy taking my order noted that the sweet onion BBQ takes a bit longer, and at that time, I thought we were still trying to eat before the nap was over. Everything here is truly made to order. Before I even paid, the guy started up the stove and was making everything on the spot. At least when I went, it was a one-man operation: the cashier, cook and server was all one person. As we waited for the food, it smelled absolutely amazing in here while he cooked everything up. Sitting there listening to the music with hot deliciousness flowing through the air was something I could have done for hours. And the food itself? As good as it smelled. I wished I had been hungry enough for another sandwich or two because I wanted to try more of what they had to offer. Normally I would eat some of my wife's food too, but she ordered a "Muffalotta" (funny spelling), and I am not a fan of olives. But she thought hers was great. But here's the most ***important*** part of this review: On a Saturday afternoon at about 1pm, we were the only customers in here from start to finish of our meal. I asked the guy if they normally have more business and he said, "we just take it day by day", and I've been thinking about that interaction since I left. This place has amazing reviews and after one visit, I concur with everyone else - it's great. Local business needs the support of the community and I really hope that the fine folks of Spring get out and find their way here. This place has great food, nice people, fair prices and local owners. I live over 30 minutes away and I will definitely be back. I hope others reading this do the same!

Man!!! My daughter keeps telling me how much she LOVES this place, and when I tasted their food I couldn’t agree more!!! This is the best cajun food I’ve ever had in my life!!! I’ll be making a trip there for sure!!! Thanks for loving what you do, and cooking it soooo well!!!

Loved it. A one man army when I went in, so definitely not a place to rush into with a large crowd. But, a great lunch for 2 or 3 people and some very kind service. 10 out of 10 would recommend.

Our office went for lunch , was so impressed, real cajun food! So many places say they are Cajun but aren't even close , but this place is the real deal. Had the gumbo and boudin, both were great. Everyone in my group loved their food. This IS cajun food so if you don't eat Cajun then don't come looking for something else, but if you truly like Cajun food this is the real deal!

Growing up in LA, I know what a PoBoy is. My Roast PoBoy was not what I expected at all. I took a bite and knew my "Mikey" who was with me, would eat it later. It is pricey. Won't return.

I thought I didn’t like boudin until I tried this place. I misunderstood the menu and didn’t realize the seafood (shrimp and crawfish) sub was boudin. The only boudin I had ever had was from the Kolache Factory and I didn’t like it at all, so once I realized I had ordered a boudin sub I was kicking myself. But then it was amazing! The employees were really nice too. Will definitely come back when I’m in the area again.

Located on strip near Walmart on Sawdust Rd, the outside of this business looks unassuming like any typical sub/sandwich place; and I am talking from the perspective of a person who thinks a real meal is on a plate . But I am converted because the subs here are really good. We have been coming here since they opened and everything is good, although my favorite is beef au jus with the amazing dip sauce; you just don't find this often around here or H town. The gumbo, etoufee, red beans and rice are rich and full of spices just like I remember from the classic Cajun cuisine places in New Orleans back in the days. The proprietor of this business takes order, makes everything from scratch, his foods are packed with care and I can see all the attention to the details from taping the containers so the content do not spill, the thick butcher paper to wrap the sub, the heavy duty brown napkins to soak the messy fingers and sauce. The inside of the restaurant smells wonderful like good food is being cooked, and it is always spotlessly clean. It is a small 1-2 person family team who works extremely hard to run this business & deliver fresh good food.
