I was coming through Provo tonight and spotted their food truck in the Fresh Market parking lot. I originally ordered 2 Al Pastor and 1 Pollo, but they only had enough prepared Al Pastor for one and they'd sold out of Pollo (always a good sign of great food when they run out, because that usually means people love it!)So I opted for the single Al Pastor and 2 Asada. These tacos are magnificent! We tried pollo, carnitas, carne asada and el pastor w a pineapple slice. Their Pico is not tomato based. It’s vinegar based. !Excelente! I also ordered chips and salsa, the salsa that comes with that is more of a red pasty type. Their salsa bar has very good selections of limes, onions, radishes, of course the Pico, green, their red has smoky flavor, super hot, and of course they offer the fire hot sauce. This place is a classic street taco place where you will be the only one who speaks English when you walk in. I got talked into their Birria and it was the best I've had in Utah hands down! The Al pastor can't beat Holy Taco but they were all good!
