Tasty build your own burrito joint with a bar in the back called baby bar. Almost all their sauces are vegan I believe, and they have plenty of veg options to add to your burrito including tofu. Pineapple salsa and peanut Thai sauce are delicious.
Employees were super nice and gave me lots of good info about the local scene. The food was good, the bar was really cool. Big and only issue I had is there doesn't seem to be A/C or its very weak even on a hot day.

Really enjoyed a custom made vegan burrito with brown rice, tofu and potato to take back to my hotel room. Service was fast and friendly, and the burrito was very reasonably priced at just $10. Will definitely be back when next in Spokane.
