Kinmedai was excellent. So was Aji from Osaka. Tuna is from Hokkaido, taste similar to Ohma tuna, but slightly difficult. Chef knows edomae style and textures of fish, either natural or farm raised. I really love their spamasubi and their miso soup. It reminds me of my high school days when people would sell spamasubi from their backpacks.
