Everything is amazing here, the vibe is incredible and very casual for a Michelin restaurant, the food is next level, and the price is so affordable I can see why they are booked out two months at a time! We sat at the bar and honestly was such a great experience watching them make the food and chatting with the servers & bartenders. You mustttttt get the sourdough tortillas. Everything we got including the cocktails were phenomenal and we got the sweet potato for dessert. The portions are way bigger than I expected, so you had to roll me out of there to get home. The sweet potato was even good cold as leftovers, and a nice treat after an amazing meal. The scallop was my favorite thing on the menu *chefs kiss* 100/10 we love! Also- go for HH before 5pm. You can get red peppers & onions, green peppers & onions or both. The bar is very laid back. You can usually catch young people shooting the breeze or watching sports. The place is never packed but never empty. The staff is super friendly humble kind. They have an outdoor seating area at the one that I went to. Plenty of parking. I’m not so hot on trivia or drag queens. But its a very comfortable laid back environment. Safe for people of all ages. I usually get the quesadilla and I’m coming here from now on instead of Chipotle.“

“We live over an hour away but are always happy to come to Los Carboncitos to hang out with friends who live locally and enjoy some delicious food. There is generally tons of parking available in the lot. Saturday nights can be a bit more difficult with the bars/clubs nearby. Lots of seating inside that can accommodate smaller to larger parties. Service is always excellent and friendly. Love the variety of salsas that come with the chips, and our food is always delicious.“

“Hidden gem! This is my new favorite breakfast burrito in Colorado. The chorizo was on point! I got it with green chili inside. The mild and hot Sauces were a delicious addition but the burrito was so good on its own that you don’t even need them - Perfect for on the go. The owner’s son was working the counter and he was so friendly and we chatted for a while. The family’s heart is in this business. 11/10 experience.“

“We got tacos de lengua, menudo, and a Juárez-style burger. The burger was a bit salty and a bit more avocado would’ve been great, but if you’re a big meat-eater go for it. It’s a cheeseburger with hot dogs, ham, bacon, jalapeños, and avocado. The tacos were good too and had good amount of meat in them, and the menudo was delicious! My only “but” with it is that I would’ve preferred tortillas rather than bread but that’s more of a regional/personal preference. Be sure to ask for extra limes! I’m happy they deliver and that it was fast. Will definitely order from them again!“

Family owned and so delicious - you must try or even order for take out. We ate in and Ricardo said business is ok and can't wait to open the patio! Remember this patio from previous restaurants, Solena, Firefly? I ordered the Burrito de Birria and one of the best burritos I have ever tasted! “We have been dining at the Park Meadow location in LoneTree for a couple of years (about a total of ten times) as we live about 30+ miles away. So it is always a time we look forward to. Our experience in efficient friendly staff and awesome food has always been excellent. This is definitely the Mexican restaurant you would take out of town guests to.“

“We had the most outstanding dinner tonight. Everything was on point from the atmosphere, to the food and beverage selection. Our server, Bri, was so welcoming and gave us some of the best recommendations for mezcal, cocktails and which tapas to order.
We got the Corn Sour and Colada- both highly recommend. There are so many mezcals to choose from but the two we got were different enough from each other and were both so smooth (see photos).
We started with the tostada de toro, their dry aged tuna was melt in your mouth decadent and the whole tostada was so flavorful. They display their dry aged tuna on the wall and it really added to the aesthetic of their open kitchen.
The second dish was the burrita de chicharrón- the most delicious pork burrito with homemade flour tortilla I’ve ever had with a flavorful salsa on the side.
Third was the costillal de res, a bowl of braised short rib, black beans and chilled with a side of corn masa tortillas. I don’t even know what to say it was the best taco situation I’ve had in a long time.
We wanted to try one more thing and had the tlacato de pato- a slightly spicy duck dish. So tender and filling. I had some corn tortillas left and made a taco out of that, perfection.
They don’t openly have a dessert menu but there is one thing they serve and it’s a surprise- the most delicious one ever so go check out this restaurant and try it all!!

“This may be the best food (overall) that I’ve ever had in Colorado so far, and the BEST tacos by a landslide. Whoever is making the food at this place is surpassing any and every other *good* taco spot I’ve ever tried. The steak and chicken tacos were so perfectly cooked, flavorful and juicy - not doused in hot sauce or something spicy to cover up the flavors of real food made well… This is the work of a true chef and/or someone who has many layers of knowledge on how to marinade and season Mexican food to bring out the most vibrant and delicious flavors. Nothing is greasy, the meat isn’t rubbery or overcooked or skimpy portions. Everything is just the right portion (slightly larger than street tacos, so you don’t have to order 4 to feel full and get your money’s worth, 1-2 tacos with chips and queso or guac is plenty to feel happy with). Everything was incredibly fresh as well, including everything in the tacos, salsa, guacamole, tortillas. I would eat these tacos every day if I could.

It’s a bit of a small space, but exceptionally clean. Like… spotless, in the kitchen and in the dining areas and restrooms. Service was great. Not too loud, like most places that are blasting music - which was much more pleasant to the nervous system. Always appreciate low volume, chill environment to feel relaxed. This place is a 10/10 perfection.“
