This place is incredible. I come here all the time and the food is always amazing along with a super friendly staff and great prices. Go to maggie's instead of an overpriced chain restaurant you will not be disappointed!
First, a little background about food trucks. In the 1990's, food trucks were much different - you didn't have a vast selection of specialty foods available. A food truck was more like a mobile convenience store, carrying the expired stuff that 7-11 had unloaded for 1/2 price in the wee hours of the morning.
