My husband and our little one stopped in the Sauvage Spectrum winery in Palisade on a Tuesday afternoon in late January and loved our time here - visiting during the off season is amazing!! Much less crowded and you get to spend more time with the winemakers; we chatted with co-founder, Patrick, for quite a while and loved learning about the wines (and all the cool stuff they’re doing with natural wines like pet nats and bourbon barrels) and the winery and vineyards’ history....read full review
Wonderful winery with spectacular sparkling wines. I had a terrific tasting experience with John. The tasting room has very few extras , but the wine and the people make it worth the visit. I encourage you to add it to your winery list.

Great winery with multiple preset tasting flights and the option to create your own experience. Great atmosphere, industrial but awesome place. Plenty of room outside to relax and hang out. And daily Happy Hour 3-6p 50% of tap wine pours.
