Finally after a year of planning we were able to visit the waimea farmers market and get to check out this falafel place. This is honestly the best falafel I've ever eaten. They bake their pita from scratch, organic sourdough, and use mostly local fresh veggies and make their own sauces and toppings. They get their vegan tzatziki from another local maker, which is delicious!! Try their hibiscus limeade as well!
