We had a hard time deciding on what to eat. Everything on the menu looked amazing. We enjoyed the meatball appetizer with ricotta, whipped feta (omg so good)… burger, ribeye sandwich, bacon wrapped meatloaf and of course chopped salad. Everything was perfect. So full of flavor. High quality across the board. Friendly service. Felt welcomed. Looks like we made a great choice - place was busy the whole time we were there.”

“We love speciation!! So much so, that my now husband and I went on our first date there. So when it was time to find a wedding venue, we reached out to see if it was possible to host it at Speciation. Thankfully Mitch and the crew said yes, and we had literally the best party ever.
When I say working with the specation team for our wedding was a breeze, I mean it. Any questions I had was answered quickly and with detail. The day of the wedding Jane and Carly took such good care of us and all of our guests. They handled our crew with grace and everyone had a great time. We were able to get into the venue early to do all the set up so that we could have a few hours of peace before the big day started. It was a beautiful space to have our wedding and we are so thankful we did.
We also choose to have the team make us a wedding beer. We got to chat with Mitch for the ideas we had and he brought them to life. We went with a hot toddy inspired beer. They even let us submit our own label for the beer. It was a great gift for our guests, to have on tap during the wedding, and have some extras to drink in our first year married.
If you're looking for an awesome place to host an event, I highly suggest reaching out and working with the speciation crew!”

The tortillas are handmade, and the meats are full of flavor, tender, and juicy. Tacos come with the traditional toppings of chopped onions and cilantro, and let me tell you, no taco is complete without its perfect companion – salsa! This place takes salsas seriously, offering a range of bold, flavorful options that pack real spice (and there’s something for every spice preference). Unlike the bland, watered-down salsas you often find elsewhere, these are vibrant, complex, and absolutely delicious. The tacos and quesadillas are outstanding, but don’t miss the chilaquiles – especially with the green salsa. They’re hands down the best I’ve had. They also offer nopales – a cactus commonly used in Mexican cuisine – which makes for a great vegetarian option. “POUTINE WEEK! September 13-28 on Michigan St in Grand Rapids.
- Braised Short Rib Poutine (GLUTEN-FREE!!) - $20: It was the only gluten-free option we could find. Poutine has gravy which is typically made with flour, but can be made with corn starch. They have a gluten-free option which is basically without the Mint Gremolata (which we didn’t want anyway). It was the last serving of the night since they ran out. It was VERY good, so I can see why it ran out.
The hand-cut fries were medium shoestring cut and were mainly soaked in the gravy. The texture wasn’t too bad for what it sounds, though.
The braised short rib was the main player in the dish. It was very tender and you could tell they went all out.
The cheese curds were classic poutine. I thought there wasn’t enough when looking at it, but was actually spot on (there were actually a few leftover at the end).
The citrus crema was potent by itself to the taste, but once stirred in, a wonderful nuance.
I am seriously considering it as first place, but the price tag was $20. It was a good value, though for sure! It was a large plate!!
- Diner Style Smash Burger - $18: Also, I have been wanting to try their smash burger. Couldn’t resist.
The smash burger patty was high quality and cooked right. The bacon was thick and tasty. The toppings were also higher quality and well balanced. The cheese was slightly on the lighter side, but worked in this case really well.
I was really looking forward to the Nantucket bun, but the sesame seeds were a bit over done. The bun was good, though.
- Service: We were allowed to choose our own seats. Some of the tables were not yet cleaned up, so it was a little slim pickings. The waitress was very positive, knowledgeable, and helpful. There was a mix-up about the poutine. We wanted gluten-free and it was not understood the first time, but it was noted and corrected BEFORE it was actually made.
I wasn’t too excited to use the online menu, though. It worked for us since we already knew what we wanted.
- Atmosphere: Darker industrial feel with wood accents. There was softer and quieter music in the background and it was a great quiet place to stop. We dined indoors, but there is outdoor dining out back or on the ROOF!
- Conclusion: This place has a lot to offer! The exterior is a bit deceiving. It is amazing on the inside. It is clean and professional. The food is high quality and at a fair price. It is a little more expensive, but it is worth the price you pay.

Parking: Took me some time to figure out parking, but you can park behind the Grand Coney if there isn’t any parking available close by (which there almost certainly won’t be). It is public parking and there is a lot of it.
Street parking will cost money before 7pm on weekdays, but will be convenient. Off street parking will mean walking, but free.”

Disappointed there was no room service for breakfast or really any real breakfast options… I had better options at the 11 Best Western properties I stayed in during a 2023 two week road trip - full buffets (eggs, omelettes, pancakes, waffles, fruit, juice/milk, toast, bagels etc… INCLUDED as part of my reservation… ) the only breakfast option at the Amway Grand is grab-and-go cr*p… for an additional charge…from the Wolfgang Puck Kitchen Counter… located in the first floor of the hotel… As part of the “Curio Collection” of Hilton, and for the price of the room, I expect better. We tried a Hot Mess breakfast with eggs, potatoes, chorizo,etc; it was perfectly balanced (neither to spicy or bland), super fresh; loved it. We also got a grilled cheese, with pepper jelly. The bread was the best ever (toasted perfectly) and crunchy, and it wasn't to cheesy (some places put too much cheese which makes it messy) with just enough pepper jelly to create an original experience; and one of my favorite sandwiches of my life. The salad was the low point of the meal as it was merely perfect. We also got a chocolate croissant which was great and a pot de creme which was decadent and..can I say perfect again.
