A very solid choice for Steak on The Strip. The classic American steakhouse is a Las Vegas institution, dating back to the Strip's early days, and seemingly a license requirement for anyone wanting to open a casino resort. Equally as ingrained in the city's culture is the celebrity chef -- while the latter tradition only dates back less than three decades, it is nearly as ubiquitous in the resort corridor. Charlie Palmer Steak, a great Las Vegas treat. We ordered the Cut of the Week: Bloomsdale Spinach Salad, Dry Aged Ribeye, Garlic Beets & Carrots, Smashed Pee-Wee Potatoes and Honey Toast for dessert. A great combination of flavors which blended well and complimented each other. We were not offered the Cut of the Week Prix Fixe menu.
