Decided to check out The Swimming Hen Food Truck today in Westerville. Talked with Jason the owner. He's been a chef for 30 years. I ordered the original thighs, they are prepared with a sous vide method and then cooked in a crispy method. OMG!!!!!! So moist on the inside and crispy outside. You won't believe how good it tastes.
