“I eat a lot of pho each year... and I've sampled pho here and there in my travels. I think I know good, bad, ok, great etc pho.This is the most expensive bowl of pho I've ever had($22). But I realize I'm in Aspen, so ill overlook it. So really then, I'm just left with the pho.This is easily rated (in my opinion) as great pho. Like top pho. Anyone that claims to know pho or considers themselves an expert in rating pho, should be able to taste the broth and know instantly. I knew instantly that this was made properly. It was rich in traditional flavors, salted properly, and had a fattiness to it.I've only discovered one other place(so far) that rivals this pho from Phatt Pho N Sushi and it's Original Pho Eatery near Victoria on Vancouver Island in BC Canada. I've had pho across Canada and the USA. There is a lot of garbage bad pho out there let me tell you. So many so that I often don't even bother leaving a bad review I just get in my car drive away and say good luck with that.There is no shame in pricing this pho at $22 when so much garbage pho exists out there at the $15 price point.This pho had a good amount of onions and rare beef, and everything was simply second to none that I've encountered so far.By the way, the restaurant is beautiful.I should add... I ordered 2 bowls here as i wasn't coming back likely for years.It should also be noted there is no bathroom here you have to go next store where there is an agreement perhaps they own both places too I don't know.“
