“It's hard to overstate how important this truck is to me. I make plans with my friends, they ask me to bring them to Tacos Pachuco. When I go to a gas station, I take out cash just so I have it on hand for Tacos Pachuco. I come about once a week, and the entire time I've been doing it, Tacos Pachuco has delivered exactly what I am craving, every single time. The service is as fast as it needs to be. The creaminess really shines and the fruit based ones give you a really fresh fruit flavor. The chocolate brownie has chunks of brownie in it that are crazy good. Have you ever had brownie ice cream that's good but, you get to a brownie piece and you think, dang the brownie isn't that great? It's the opposite here, I actually thought about going in and asking if they sold separate brownies. Ok so here's my final take. And I apologize if I'm going on a long review rant, lol....so I'm a foodie, one of the ways I judge things is by getting something simple and traditionally not considered the stand out option by which to judge. Like pizza, I get basic cheese, if I'm blown away, I know other options are going to be spectacular. So here I get the Sweet Cream ice cream. The owners are super friendly and gave me a sample of their Horchata (very different from the Mexican kind). He also showed me the "flower" used for the flower pupusa. It's ideally a vegetable with a strong taste. I ended up ordering the Revuelta (pork, beans, cheese), the Bean Cheese, and the Flower one. My fave was the Revuelta! Chef's kiss! I'll be back again! The XL Xiao long bao is one of the best in person or made from frozen at home. “The food is sooo good and worth the mild wait in line. They are busy for a great reason. My aunt and I ordered taco plates. I got all chicken and my aunt got 2 pork and 1 beef taco. The birria dip was included. We also had our own margarita flights which were amazing and it was only $20. We sat at the bar which was really cute. There's also a little patio attached to the bar! Only got pics of the food because I was in a hurry.“

“Some of the best Indian food I've had. The chicken marsala is delicious and it comes with naan, but I substitute my naan for garlic naan since I like that a little bit more. The rice is great too! “I found this truck driving up Federal and kept seeing it so I decided I needed to stop by. I am so glad I did because the street tacos at Tacos El Divino were outstanding in terms of the flavor and the value. I of course got al pastor tacos because when you see an alcohol store spit you can't say no! Well standing in line I learned that the people in front of me drove all the way from Fort Collins to try this truck after seeing it on tiktok. I usually expect to see a line on Friday and Saturday nights. They usually have heater set up outside so that you can wait without freezing to death too. They also have a variety of sauces for the tacos which I love as well. I definitely will try this again especially since it's such an inexpensive meal!“

“We came on a Saturday around 4, and this place was hopping. There was quite a line for cocktails, but it moved fast. We had the hibiscus margarita and the espresso martini, which were both good but not great. Everything is pre-mixed, so you cant really special order anything. My husband asked for a tajin rim but ended up with a black sugar rim instead, weirdly. There were two food trucks there, which felt a little light, and neither really called to us. There was a line of people waiting for their food so I walked up to the window and asked for a recommendation on what to order. The guy was super friendly and walked me through the menu so I settled on his rec of Shrimp Ceviche and Quesadilla de Marlin. I took the bag of goods home and as I opened the boxes....omg.... Everything smelled AMAZING!! I immediately tried the quesadilla and was blown away by the flavor of the cheese and fish. The ceviche was loaded with fresh avocado. Each taco is filled with a great amount of meat, some cilantro and onions then a lime wedge and your choice of salsa on the side. I chose the red salsa which is the spiciest they have. The order was 3 for $15 but I was able to request a single taco as well. The meat was flavorful and had just the right amount of spice. The service was quick. Was gonna eat at our usual spot Bread and Deli in kukui grove (their clam chowder bowls for 8$ is so good) but they were closed (everything closes super early on Kauai aside from all the tourist spots in Kapaa) we settled for this Mexican food truck and it was really good. 18$ is a little steep for me but it is in kapaa and a big portion. The chimichanga was huge and I always love having something fresh to go with it as all the meat beans and rice can be heavy. On top they put lettuce, tomatoes some guacamole cheese and sour cream. The beans on the side were a little bland and the rice is well, rice. The meat was very tender and all in all good. I was surprised that they didn't have horchata, my boyfriend and I always look forward to trying new horchatas from different Mexican eatery's so we were a little bummed out about that. Since Kapaa is a busy road and it's kind of off the main road it's a little hard to find parking. I think there was a parking lot across the street but hard to tell, we just pulled over on the side of the food truck. The server was very nice and their menu was displayed on the side of the truck which I love. I always have to visually see what I'm getting so there's no surprises when I receive the food!“
