I spent 25 years in high end seafood, (wholesale, retail, private chef, and catering) and was blown away by the quality of the fish! The chef was masterful as he balanced every single course (in had the 16) to perfection. He was incredibly skilled and a wonderful artist. The selection of fish from Japan was amazing.
