This place is it. Literally a hole-in-the-wall food truck hidden away in Brighton, and honestly one of the best pupusa spots I’ve ever had. The pupusas are fire—perfectly crisp on the outside, melty and flavorful on the inside. But what took it to the next level was the curtido and salsa. The curtido was fresh, tangy, and just the right amount of crunch. And the salsa? So damn good I could drink it. Not watery, not too spicy—just packed with real flavor.

If you’re even thinking about trying it, do it. It’s that kind of place you want to gatekeep but can’t because everyone deserves this kind of food.”

In over 30 years I have not had problems like this. So maybe a bed night for them. They were not that busy either so there were really no excuses”

“We’ve eaten at this ihop a handful of times and every time we have a great experience. The coffee is always like classic tasty diner coffee and the breakfast is consistently so good. Our little man(2.5 years old) loves the menu with the pictures of each option so he can independently choose what he wants to eat. Staff is always friendly!”

The food is more than bar food.
The wings, green chili are what you would expect. Thick juicy wings. Meaty green chili that is as expected. Spicy and full of pork, and flavor. The onion rings are served hot and fresh..
But make sure you ask for dipping sauce.”

“We met some friends for dinner outside at Simply pizza at the Run Westy Run Food Truck Park. It’s awesome pizza! We ordered four different pizzas and they were all delicious. The kids ran around and played the outdoor games while while we listened to music and enjoyed our pizza. It was awesome! Highly recommend, but kinda want it to stay a hidden gem.”

They have covering for if you would like to eat there and good music playing for vibes. Definitely on my recommendation list and will return.

“This is a local Colorado favorite! I drove thru and grabbed breakfast for me and friends! EVERYONE enjoyed the food from Santiago's! Their tortillas are definitely homemade! Their breakfast burritos were cheap, and the best in Brighton, Colorado! I give this establishment a 10 out of 10 people!! VISIT your local Santiago's whenever you get chance! Try the smothered green chili burrito!”

Today I got my food and was on a time crunch and this was the fastest I’ve ever gone through a drive through. I got my food within 3 minutes as I was paying at the first window. Starbucks are everywhere and I get the same drink a vanilla bean frap with caramel throughout the cup and on top. The cashier asked if I wanted extra caramel so I said yes. Well holly cow! I got a cup of caramel with some whipped cream. I don’t know if the barista was being a smart a$$ of what but come on!
The line was long so I could not have them remake it. I figured I could just pull my straw up and not drink from the pool of caramel in my cup. Wrong. It was so sweet and gross I just threw it away and told myself I did not need the calories. I guess I made a $6 donations to Starbucks today!”

The manager and team were so kind, they offered to help with the mess and remade my drinks free of charge immediately to get me on my way. I could not be more thankful.
