“Move over, Elgin hot guts. Both Southside Market and Myers have reduced the spiciness of their "hot" sausage to the barely warm level. The sausage here is not as hot as the Southside hot guts of my youth 60+ years ago, but it definitely has a kick. The grind is coarse enough that you actually have to chew, and the flavor is well-rounded. In short, it's better than anything you can get in Elgin today. The pork ribs were meaty and tender and although they could use more smoke, were very good. The two-meat plate with a generous serving of sausage, three ribs, two sides, bread, pickles, and onions was very reasonably priced at $13.99. Definitely a go-to place in Gonzales. FYI, I worked at Southside in the late 50s and early 60s, so I know a thing or two about hot guts (AKA sausage).“
