“Wow. It's simply impossible that fine dining could be this fantastic. Tashon, Jens, and Jackie rolled out the red carpet so amazingly, you would have thought our last name was Bou. Sebastian behind the counter was simply breathtaking. We've had omakase at some of the world's leading places in Miami, in Seattle, in NYC, and Tokyo, led by folks who were trained by one of the global icons, and I have to say that Sebastian's ability to create absolutely new and inventive tastes and flavors - while adhering to simple and gorgeous presentations - was simply unmatched. While Sebastian was working his magic, the rest of the team was working hard to make sure every other part of the experience was simply flawless. Water? Always full. Cocktails? We were always asked about how we enjoyed each one well before each was empty, by the expert mixologist who was able to explain the difference between how American mint and Japanese mint can enhance the flavor of certain beverages. Plates? Cleared instantly. Feedback welcomed by the chef? Absolutely. The energy level is not “watch me make your next item while the brightly lit room cowers in awkward silence” - like so many high end omakase spots. This experience is more like “Do you want to be sad when your dinner ends because you don't know when you're ever going to feel this happy with a meal?” There's so much more I could say, including how the effective background evening vibes by Utah's legendary DJ Ta-Salmon made us want to sing each employee's praises. As MJB once said, it truly feels like this team is a family, and it was a Family Affair. Concluding, let me say what MJB would - when you go to Sushi by Bou at Fulton Market - Leave your stress (and hunger) at the door, so when you step inside, you'll see what's in store. Sigh... “I seriously wanted to give this place a 5 star rating. But one star got away because the evening went by super fast. I meant just approximately 75 minutes for the 18 course dinner.

This is not a pure Sushi (Nigiri) Omakase place, rather a part French-part Kaiseki-part Nigiri Omakase style place. The chefs don't skimp on ingredients and everything is top quality. The taste is excellent as well as the execution. The service is shuttle yet never lacking. Yet, the dishes show up one after another without a break.

If the actual dinner time could be stretched out to 100 minutes, this place is destined to be a wholesome experience.“

“Oh my god I got the torched and pressed sushi roll with avocado and truffle and it's one of the best things I've ever tasted. The truffle flavor with miso is an incredible flavor combination. The interior is really pretty as well, and they have a ramp at the entrance so it's pretty wheelchair friendly. The tables are a little close together so navigating inside was slightly awkward with my mobility device, but it wasn't difficult to push some chairs out of the way. I will definitely be coming back here and I will definitely be ordering the torched and press roll again.“

I really wanted to have Japanese food (specifically Onigiri) for a Studio Ghibli-themed baby shower, and reached out to several local restaurants. Ekiben was by far the most responsive and fairly priced!

“The first time we came here we loved the entire experience including the service. The second time we brought friends and the food was just as good, but it was significantly busier and it was clear that the staff were not able to keep up. Rarely was our table bussed and glasses of wine took ~ 15 minutes. Fortunately they comped the late glasses of wine and as mentioned- food was great and it did arrive/spaced out as it should have. I hope they continue to do well, but I also hope they figure out the service situation. We will definitely be back again!“

“This was a wildly delicious meal. Inventive but also traditional. The food itself was the star, but every other aspect of the meal was also great. It felt like a dinner party at friend’s house. The atmosphere was convivial with the chef explaining the food and answering questions from the diners with everyone in the room being able to hear. The single waiter, Jose, was also a delight. I would return here in a heartbeat despite the price tag.“

“Hands down, this was most incredible dining experience I've had the pleasure of tasting in my life. My husband was able to reserve a table for us same day, and while we waited to be seated in the sushi bar at the back, we were served a couple of delicious cocktails. Once seated, the real magic began!

I have never tasted such unique creations before. Each bite was exquisite, each fish's unique flavors complimented but not overwhelmed by the incredibly fresh ingredients atop each piece, expertly crafted and delightfully arranged. Omakase can be a bit of an intimidating experience, especially if you are not sure what you are getting. It can be an experiment in trust. I can say that after the first bite of sushi, the tartare, I wholeheartedly trusted whatever Chef Marcos wanted to put on my plate!

The sushi chefs were so talented and so friendly, answering all our questions about the food and more. I felt I got to know Chef Marcos in particular, who was both skilled, well traveled, and wicked fun to talk to. He even delighted me by speaking a bit of Vietnamese, which I found impressive and charming in equal amounts.

I cannot say enough about how mind-blowing this dining experience was. If I am ever back in Chicago, you can bet I will be back again to enjoy what new creations Chef Marcos has in store for the season.

Dietary restrictions: It is also of note that my husband has a shellfish allergy, and all chefs were incredibly careful in accommodating my husband's allergy, subbing out ingredients so that he wouldn't miss out on anything. I found their care and attention to detail to his allergy be very impressive, and I'm sure anyone with any dietary restrictions will find them equally accommodating.
